This Week's Recipe: Scallopine di Manzo

A great dish, with a flavor and smell that was out of this world in the Monks Media Studios!
-1/2 to 1 pound eye of round beef
-1 tbsp finely chopped garlic
-1 tbsp butter
-3 tbsp beef stock
-1/2 cup cream
-1/4 crumbled Gorgonzola cheese
-1/2 cup brandy
Pound thinly sliced eye of round beef until very thin.
Dust with flour and quickly brown in olive oil.
Add garlic and saute then add 1/2 cup brandy.
Allow the brandy to flame down and add 1 cup coarsely chopped Portabella mushrooms.
Continue cooking and add 2 tbsp butter, 2 tbsp beef stock and 1/2 cup cream.
Add 1/4 cup crumbled Gorgonzola cheese.
Stir to melt Gorgonzola and season to taste with salt and pepper.
Place Beef on plate and pour sauce over it and Buon Appetito!
