ORANGE ROUGHEY PIZZAIOLA

Ingredients:
1-4 Orange Roughey fillets
2 tablespoons Olive Oil
1/2 cup Flour
2 tbsp chopped Garlic
2 tbsp Capers
1 cup White Wine
1 cup chopped Tomato
1-4 tbsp Marinara Sauce, if desired
2-4 torn or chopped Basil leaves

Trim the fish fillets and coat with flour

Add olive oil to saute pan, heat and add fillets

Brown on both sides and remove

Add garlic and capers to hot oil and saute until soft

Add white wine and reduce by half

Return the fish to the pan, add tomato and reduce further

Add salt and pepper to taste

Place the fish on a plate, pour the sauce and tomato over it and garnish with basil
