This Week's Recipe: INVOLTINI DI MANZO

A popular Italian dish as prepared by Chef Matteo, Matteo's Ristorante Italiano , Noblesville, Indiana.

Ingredients:
Bon Apetit


-CROSSCUT SECTIONS OF EYE OF ROUND PROSCIUTTO, SLICED THINLY
-MOZZARELLA CHEESE, SLICED THINLY
-1 TBSP FLOUR
-3 TBSP OLIVE OIL
-SALT AND PEPPER
-1 TBSP CHOPPED GARLIC
-1 TBSP FRESH ROSEMARY OR 1 TSP DRIED CRIMINI MUSHROOMS, SLICED
-1/2 CUP WHITE WINE
-1/2 CUP BEEF STOCK
-1 TBSP BUTTER
-1 TBSP CREAM

POUND THE EYE OF ROUND SECTIONS UNTIL VERY THIN.
ADD A LAYER OF PROSCIUTTO AND MOZZARELLA THEN ROLL UP AND SECURE WITH TOOTHPICKS Bon Apetit

COAT THE ROLLS WITH FLOUR AND BROWN EVENLY IN OLIVE OIL. REMOVE ROLLS FROM OIL. Bon Apetit

AND SALT AND PEPPER, GARLIC, ROSEMARY AND MUSHROOMS. SAUTE.
ADD WINE AND STOCK, THEN REDUCE
FINISH WITH CREAM AND BUTTER. Bon Apetit
