This Week's Recipe: Balsamic Vinegarette

Why settle for a regular salad when you can Zip it up with a sweet but flavorful Balsamic Vinegarette dressing?
Ingredients:
-1 1/2C Olive Oil
-1/2 c Modena Balsamic Vinegar
-1 tbls Honey
-2 tsp of Dijon Mustard
-1 tsp of dried oregano
-2 cloves roasted garlic

Combine vinegar, honey, dijon mustard, garlic, then whisk in olive oil slowly
add the oregano at the end, season to taste with salt and pepper.
WOW! So simple to make but the taste is like we have had only at Matteos. I think we will be making our own dressing from now on. What makes this dressing so great, beside the sweet flavor from the honey and the zip of the dijon, is a fresh greens selection of lettuce. Keep the Iceburg lettuce for your burgers! This dressing deserves a Spring mix lettuce and greens selection.
